Tim Herman is a seasoned hotelier and restaurateur with more than 40 years of experience leading luxury hotels, resorts, and culinary destinations across the United States. He is the driving force behind AMBER COVE, a refined coastal restaurant concept he launched in Naples, Florida, in May 2025.
Throughout his distinguished career, Tim has held executive leadership roles with some of the world’s most renowned hospitality brands. He served as General Manager of LaPlaya Beach & Golf Resort, The Inn on Fifth, and Swissôtel Chicago; as Hotel Manager at Turnberry Isle in North Miami; and as Director of Food & Beverage at Caesars Palace and The Venetian in Las Vegas, as well as The Plaza Hotel in New York.
Tim’s operational expertise spans the management of over 70 restaurants and bars, including luxury dinner theaters, themed dining experiences, food courts, a magic and entertainment venue, a high-energy discotheque, and banquet facilities totaling up to 500,000 square feet. His portfolio even includes oversight of table games operations within a major Las Vegas casino—demonstrating a rare ability to integrate fine dining, large-scale event execution, and entertainment under one vision.
AMBER COVE represents the culmination of Tim’s decades-long passion for food, service, and experience-driven hospitality. By reimagining the former KC American Bistro, he has created a dining destination that blends artistic cuisine, warm service, and a coastal-chic ambiance designed for both locals and visitors alike.
